    Hungarian - Beef Goulash #2

    Source of Recipe

    from Flamingo Times, Wildduck Publishing

    Recipe Introduction

Another one, but with a bit of a twist.

    List of Ingredients

    4 sliced onions
2 pounds beef or veal cubes
    bacon fat
    3 cups brown stock
    pepper
    paprika
    2 cups small potatoes
    12 small pearl onions
    1 cup sliced carrot
    1 cup cubed turnip
    salt

    Recipe

    Preheat oven to 350.
Coat a casserole dish with cooking spray.
Use a medium frying pan to cook the onion and meat in a
little bacon fat, until brown. Transfer to the casserole dish.
Pour the brown stock over top, and sprinkle with pepper and
paprika. Place in oven and cook for approximately 45 minutes.
Add more bacon fat to whatever is left in the frying pan.
Add the potatoes, small onions, carrot and turnip and brown.
Add the browned vegetables the casserole after the 45
minutes and stir. Salt as desired.
Bake for 1 hour, 15 minutes, adding more brown stock if
necessary. This dish should bake for 2 hours.
If the broth is too thin when ready to serve, thicken slightly.
