    This has become a favorite during the summer and is
    often made with very spicy dishes - like spicy ribs.

    India - Raita (pronouced like right'-tuh)

    2 medium cucumbers
    2 green onions with tops - chopped
    1 teaspoon salt
    2 medium tomatoes, chopped
    1/2 clove garlic, chopped finely
    2 Tbs. finely cut parsley or cilantro (I use parsley)
    1/2 tsp. ground cumin
    1/8 tsp. ground pepper
    1 cup plain yogurt

    cut cucumbers lengthwise in halves, scoop out seeds. Chop cucumbers.
    Mix cucumbers, green onions and salt and let set for 10 minutes. Add
    the tomatoes. Mix the rest of the ingredients except yogurt and toss
    with the cucumber mix. Refrigerate at least an hour. Drain thoroughly
    and add the yogurt just before serving. You can halve everything (I
    still use the whole amount of pepper and cumin) if making a small amount
    since it is watery the next day. One of my sons used sour cream instead
    of yogurt and loved it.

    makes 6 servings (calories per serving 55, fat 1 g., carb. 7, pro. 8)
