Indian - Chicken Tikka, (East Indian)
8 chicken breast halves - skin removed
Make a marinade of:
1/2 c. plain yogurt
1 tsp. salt
1 tsp. ground cumin and coriander mixture
(available at East Indian Stores)
1/4 tsp. turmeric powder
2 tsp. vegetable oil
Marinate chicken for at least 2 hours in a saucepan.
Boil until cooked, approx 20 min. Remove from marinade.
Boil 4 peeled potatoes in the same juices.
Mix in a bowl:
1, 5 1/2oz. can tomato paste
1/2 c. bunch fresh coriander leaves chopped
1 tsp. hot chilli powder
1/2 tsp. salt
1 tsp. lemon juice
1 tsp. oil (optional)
Rub mixture on the chicken and potatoes and let stand
for a few hours or overnight in the refrigerator.
Broil both sides under broiler until hot.
(works on the outdoor grill too)
If desired can put a little oil on the chicken and potatoes before broiling.
