Mennonite - Brown Flour Potato Soup

List of Ingredients
6 medium sliced potatoes
1 sliced or chopped onion, optional
3 c. water
3 c. milk
3 tbsp. flour
3 tbsp. butter
salt and pepper
1 tsp. dried parsley
Recipe
Boil potatoes and onions in salted water until tender.
Add the milk and let simmer.
Brown the flour in the melted butter, stirring all the time,
over a low heat.
Add it to the soup, stirring until the mixture thickens.
Sprinkle with parsley and pepper.
Serve with buttered crumbs, or squares of fried bread, or
pretzels on top.
