    Mexican - Pork Carnitas, easy

    1 Tablespoon dried ground red Mexican chile or poblano chile
    salt and pepper to taste
    1 teaspoon ground cumin
    3 cloves minced garlic
    2 teaspoons cilantro (optional)
    1 pound pork, cut into 1 inch cubes

    Combine all spices and rub the pork cubes with the
    mixture. Let the meat marinate at room temperature
    for 1 hour.
    Bake the cubes on a rack over a baking sheet for
    1 1/2 hours at 250 degrees F., or until the meat
    is very crisp.
    Makes 6 servings.
