Pennsylvania Dutch - Cracker Pudding
Mix together:
1/2 cup packed brown sugar
2 egg yolks
2 cups crushed saltines
1 quart whole milk
1 teaspoon vanilla
Cook until thick in double boiler or in microwave on medium.
Stir in:
1 to 1 1/2 cups flaked coconut
Stir until cracker crumbs are soft and mixture is thick.
Add vanilla.
Pour into buttered 9x13x2 inch baking dish.
Top with a meringue made with:
2 egg whites
3 Tablespoons granulated white sugar
Bake at 350 degrees F. until golden brown.
Optional: Omit meringue and top with whipped cream.
Serves 8.
