    family for generations. Carol

Polish - Stuffed Cabbage Rolls #1

    For the filling:

Boil 2 cups of uncooked rice (don't overcook!), rinse, drain and put in
    large bowl.
Run 1 pound of bacon and 1 medium onion through a grinder
(I also grind 1/2 pound fresh pork), onion.
Add this mixture to the cooked rice along with 1 quart sauerkraut
(I make my own) Mix everything together.
    Add salt, pepper to taste.

Roll in cabbage leaves that have had the rib "shaved" and have been
softened in boiling water. Pack in a roaster that has been lined
with cabbage leaves. Add more leaves to cover, add water to about
1/3 way up the roaster and bake in a 350 degree oven for approximately 3 hours.
