Polish - Stuffed Cabbage Rolls #2
For the filling:
Cook 2 cups of uncooked rice until done. Do not overcook!
Rinse, drain and put in large bowl.
Run 1 pound of bacon and 1 medium onion through a grinder
(I also grind 1/2 pound fresh pork).
Add this to the rice along with 1 quart sauerkraut, rinsed
and drained.
Mix everything together.
Add salt and pepper to taste.
Roll in cabbage leaves that have had the rib "shaved" and have
been softened in boiling water.
Pack in a roaster that has been lined with cabbage leaves.
Add more leaves to cover.
Add water to about 1/3 way up the roaster.
Bake at 350 degrees F. for approximately 3 hours.
