Use only the ripest fresh tomatoes and a fruity green
Portuguese olive oil for maximum flavor and authenticity.
Portuguese - Tomato Salad (Salada de Tomate)
6 ripe tomatoes, peeled, seeded, and chopped
1 medium onion, finely chopped
3 Tbs (45 ml) extra-virgin olive oil
1 Tbs (15 ml) red wine vinegar
2 tsp (10 ml) chopped fresh oregano, or 1 tsp (5 ml) dried
Salt and freshly ground pepper to taste
Combine the ingredients in a salad bowl and toss gently to
mix. Serve at room temperature. Serves 4 to 6.
