    Switzerland - Zimtsterne Cookies

    Recipe Introduction

    These crisp, spicy cookies are popular in Switzerland, especially as the holiday season approaches.

    List of Ingredients

    3 tablespoons butter
    1 1/2 cups white granulated sugar
    2 eggs
    1 egg, white separated from yolk
    1 teaspoon lemon juice
    2 1/3 cups flour
    1 level tablespoon baking powder
    1 teaspoon ground cinnamon
    1/4 teaspoon freshly grated nutmeg
    1/4 teaspoon salt
    1/2 cup finely chopped walnuts

    Recipe

    Preheat oven to 375 degrees F.
    Lightly grease baking sheets.
    Stir together the flour, baking powder, cinnamon, nutmeg
    and salt. Set aside.
    Beat together the butter, sugar, the 2 eggs, the 1 egg yolk, and
    the lemon juice until light and fluffy.
    Blend in the dry mixture.
    Then stir in the walnuts.
    Divide the batter/dough into 3.
    Roll out to 1/16th of an inch thick.
    Cut into shapes with cookie cutters.
    (The star shaped cutter is traditional.)
    Beat the egg white until frothy.
    Brush the tops of the cookies with it.
    Place on the baking sheets and bake for 6 - 8 minutes.
    Makes 8 to 9 dozen, depending on the cookie cutter size.
