Recipe Introduction
Also known as Ensalada Rusa.
In Argentina and Uruguay, the designation "rusa" (meaning "Russian")
is given to anything with sour cream in it. Here is a classic side
dish that you'll find on every buffet and picnic table within 500
miles of the Rio de la Plata.
List of Ingredients
2 - 3 pounds potatoes
1 - 2 medium carrots
1 cup fresh or frozen green peas
1/4 cup sour cream, or to taste
1/4 cup mayonnaise, or to taste
2 tablespoons freshly chopped parsley
salt and ground black pepper to taste

Peel and dice the potatoes into 3/4 inch pieces.
Peel and cut the carrots into 1/4 inch pieces.
Cook the potatoes, carrots, and peas in separate pots,

Then mix with the rest of the ingredients.
Toss gently to combine.
Cover and refrigerate for at least 2 hours or overnight. Makes 4 - 6 servings.
