2 large baked potatoes, sliced
1 cup crisp bacon, crumbled
2 1/2 cups Cheddar cheese, shredded
8 eggs, beaten
1/2 cup milk
salt and pepper to taste
Coat 9 x 9 x 2 inch pan with cooking spray.
Place potatoes on bottom.
Salt and pepper to taste.
Sprinkle with bacon.
Top with cheese.
Mix eggs and milk together and pour on top.
Bake at 350 degrees F. until set in middle (about 1 hour).
For added flavor can add:
1/4 cup chopped sweet green bell peppers
and/or
1/4 cup chopped onion.
