Broccoli Souffle
2, 10 ounce packages frozen chopped broccoli, thawed
1 cup biscuit mix
2 eggs
1 cup milk
1 cup shredded Cheddar Cheese
Heat oven to 325 degrees F.
Butter well a 2 quart baking dish.
Cook and drain the broccoli and set aside to let cool.
Measure and combine the biscuit mix, eggs and milk.
Beat until smooth then add the cheese.
Fold in the broccoli and stir well.
Pour into baking dish and bake for 1 hour.
Makes 6 servings.
