    Buttermilk Pancake + Waffle Mix, w/recipes

    2 cups dry buttermilk powder
    8 cups all purpose flour
    1/2 cup sugar
    8 teaspoons baking powder
    4 teaspoons baking soda
    2 teaspoons salt
    In a large bowl, combine all ingreients. Stir with a wire whisk until
    evenly distributed. Pour into a 12 cup container with a tight fitting lid.
    Seal container and store in a cool, dry place. Use within 6 months. Label
    and date. makes 10 1/2 cups mix.

    Aebleskivers

    2 eggs, separated
    1 1/2 cups buttermilk pancake mix
    1/4 teaspoon ground cardamom, if desired
    1 cup water
    2 tablespoons melted butter
    Butter for frying
    Powdered sugar for garnish if desired
    In a medium bowl, beat egg yolks until pale. Stir in buttermilk pancake
    mix, cardamom, water and 2 tablespoons melted butter until blended. In a
    medium bowl beat egg whites until stiff but not dry and fold into yolk
    mixture.
    If you have a Swedish Aebleskiver pan great - if not butter 20 muffin cups
    and fill cups about 3/4 full. Bake in a 400F oven for 15 to 20 min. Dust
    with XXXX sugar if desired.

    Buttermilk Waffles

    2 1/2 cups buttermilk pancake and waffle mix
    2 cups water
    3 eggs, separated
    1/4 cup vegetable oil
    Preheat waffle baker. In a large bowl combine mix, water, egg yolks and
    oil. Beat with a wire whisk until just blended. In a medium bowl beat egg
    whites until stiff. Fold into yolk mixture. Bake according to waffle maker
    instructions. Makes 3 - 4 large light, crisp waffles.

    Buttermilk Pancakes

    1 egg beaten
    2 tablespoons vegetable oil
    1 cup water, ore if desired
    1 1/2 cups buttermilk waffle and pancake mix
    In a medium bowl combine egg, oil and 1 cup water. With a wire whisk stir
    in mix until blended. Let stand 5 minutes. Stir in additional water for a
    thinner batter. using 1/3 cup batter for each pancake pour onto heated and
    greased griddle until bubbles form then flip over and cook other side.
    Serve with your choice of butter, syrup, jams. Makes 10 four inch
    pancakes.

    Puff pancakes

    4 tablespoons butter or margarine
    4 eggs
    2/3 cup milk
    2/3 cup buttermilk pancake and waffle mix
    Fiesta fruit topping - recipe follows
    Preheat oven to 450F. Put 2 tablespoons butter or margarine in each of two
    9 inch pie plates. Put in preheating oven to melt. In a blender, combine
    eggs, milk, and pancake mix. Pour batter into pie plates. Bake about 18
    minutes, until pancakes are puffy and browned. IMPORTANT: DO NOT OPEN OVEN
    WHILE PANCAKES ARE COOKING!! Top with fruit topping below. Makes 2 large
    pancakes - 4 servings.

    Fiesta Fruit Topping

    1 cup pineapple chunks, drained
    1 (10 oz) pkg. frozen raspberries or strawberries, thawed
    1 banana, sliced
    1/4 cup brown sugar packed
    1/4 cup dairy sour cream OR 1 cup frozen non-dairy whipped topping, thawed
    In a medium bowl combine berries with pineapple and banana. Spoon over
    pancakes then sprinkle with brown sugar. Top with teaspoonfuls of sour
    cream or nondairy topping. Cut into wedges and serve immediately.

    Variation
    Tart Lemon Topping

    Sprinkle 1 1/2 teaspoons lemon juice over top of each pancake. Sprinkle
    powdered sugar over top and serve immediately.
