1/2 c. diced honey baked ham
4 medium flour tortillas
4 large eggs
1/4 c. milk
1 c. shredded cheddar cheese
Salt and pepper to taste
In medium bowl, combine eggs and milk. Wrap tortillas in a paper
towel and heat in the microwave for 10-15 seconds. In a large non-
stick skillet, over medium-high heat, heat diced ham. Pour egg
mixture into skillet; reduce heat to low. As mixture begins to cook
at bottom and sides, gently lift cooked portions with spatula so
that uncooked egg can flow to the bottom. Do not stir constantly.
Cook until eggs are thickened and cooked throughout, about 3-6
minutes. Add cheddar cheese; combine well. Salt and pepper to taste.
Place equal amounts of scrambled egg mixture into each tortilla and
fold or roll up. Serve immediately.
Recipe yields 4 servings.
For added flavor, serve with your favorite salsa and use flavored
tortillas
