    dry pre packaged pancake mix
    3 beaten eggs
    shredded cheese of choice
    finely chopped sweet peppers
    finely chopped onions
    chopped mushrooms

    Recipe



    Prepare the pancake mix according to package directions for
    about 8 - 10 pancakes.
    Pour in a round cake pan.
    Bake at 350 degrees F. until the batter is slightly stiff.
    Pour beaten eggs on top plus the other ingredients you choose.
    Continue to ake until the batter is lightly brown and the
    eggs are cooked.
    Serve with syrup or fruit topping.
