quiche - Bacon + Spinach
1/2 lb. diced bacon
5 - 10 diced mushrooms, optional
1 10oz. pkg. frozen spinach, thawed and squeeze dried
5 - 6 eggs
1 c. grated cheese
1/2 c. cream or milk (use slightly less if using low fat milk)
salt and pepper to taste
1 pastry crust, optional
Preheat oven to 350.
Fry the bacon and mushrooms and set aside.
Line a quiche dish or pie pan with the pastry crust, if desired.
Spread the spinach over the bottom of the pan.
Sprinkle 1/2 of the cheese over the spinach.
Sprinkle the bacon and mushrooms over the cheese.
Blend eggs, cream, salt and pepper together until frothy.
Pour the pan and top with the remaining cheese.
Bake for approximately 40 minutes.
