quiche - Pork Roll
8 slices well-done pork roll, diced or crumbled
6 eggs
1/2 cup heavy cream
8 ounces cream cheese (room temperature)
8 ounces Ricotta cheese
1 Tablespoon butter
1/2 tsp. salt
1/4 tsp. pepper
1 cup finely chopped green onions (green part only)
1/2 pound grated Monterey Jack or Cheddar cheese, grated
Heat oven to 350 degrees F.
Thoroughly mix eggs, cream, cream cheese, Ricotta, butter, salt and
pepper in a blender/food processor until smooth.
Add finely chopped green onions and blend quickly.
Spray a quiche baking dish with oil and pour mixture in.
Sprinkle the pork roll evenly on the top and then the grated cheese.
Bake for 50 minutes or until the center springs back to the touch or
a knife comes out clean.
Makes 8 servings.
