quiche - Tomato
2 c. chopped meaty, (plum) tomatoes
1 tsp. salt
1/2 tsp. dried basil
1/8 tsp. ground black pepper
1/2 c. chopped green onions
1/2 c. shredded Cheddar cheese
1/2 c. shredded Swiss cheese
2 tbsp. flour
1 c. evaporated milk
2 eggs
1 unbaked 9" pie crust
Preheat oven to 375.
Place the tomatoes in the crust.
Sprinkle with the salt, basil, pepper, onions and cheeses.
In a small bowl, whisk together the flour, milk and eggs until smooth. Pour
over the tomatoes.
Bake for 40 - 45 minutes or until a knife inserted near the center comes out
clean.
Let stand for 10 minutes before cutting.
Makes 6 - 8 servings.
