quiche - Vidalia Onion
4 large Vidalia onions, (about 6 medium),
...cut in half and thinly sliced
4 tablespoons butter
1 cup milk
2 large eggs + 1 egg yolk
1 teaspoon salt
1/4 teaspoon ground nutmeg
ground black pepper, to taste
Preheat oven to 325 degrees F.
Butter well a 1 1/2 quart baking dish or a deep dish
pie dish.
In a large frying pan, sauce onions until soft and golden
color. Let cool to room temperature.
Use a large bowl to whisk milk, eggs, egg yolk, salt,nutmeg
and pepper together.
Add onions and stir well.
Pour into the baking dish.
Bake for 40 to 50 minutes, or until lightly golden and
a clean knife inserted comes out clean.
Sprinkle with chives or green onion.
Serve hot.
Serves 4.
