Bacon, Cabbage + Rice
1 cup rice, cooked make it approximately 3 cups
1/2 small head cabbage, chopped
1 medium onion, chopped
1/2 sweet green bell pepper, chopped
3 eggs, scrambled
1/2 pound bacon
Fry bacon in electric skillet to very crisp.
Remove bacon and pour off some fat if it seems too much.
Add cabbage, onion and pepper and fry a little.
Add eggs and then break up bacon and add.
Last of all add cooked rice.
Stir while adding each ingredient.
Can be served with soy sauce if desired.
Note:
This reheats so well in microwave or conventional oven.
Also freezes well.
