Chicken Rotel
1 Tablespoon oil
4 boneless chicken breasts, cut
...into 1 inch chunks (1 1/4 pounds)
1 cup uncooked long-grain rice
1, 10 ounce can diced tomatoes with green chiles
1, 8 ounce can tomato sauce
1 cup water
3 green onions, thinly sliced,
...reserve 2 Tablespoons for garnish
1 cup shredded Cheddar cheese
sour cream, optional
Heat oil in skillet at 375 degrees F.
Cook chicken for about 5 minutes, stirring frequently,
until no longer pink.
Stir in rice, tomatoes, sauce, water, and onions; bring
to boil. Cover.
Reduce heat to 300 degrees F.; cook 20 minutes or until
rice is tender. Stir.
Top with cheese and reserved green onion.
Cover and cook 5 more minutes or until cheese is melted.
Serve with sour cream if desired.
Left overs reheat well.
