Corned Beef + Cabbage
2 Tablespoons butter
2 1/2 to 3 pound corned beef, drained
1 medium green cabbage
one large onion, sliced
4 medium white potatoes, peeled
6-8 carrots, cut into chunks
Heat skillet to 350 degreesF. Melt butter in skillet.
Brown corned beef in skillet.
Add onion, potatoes, and carrots and enough water to
fill skillet about 2/3 full.
If corned beef comes with a seasoning packet, put the
contents in at this time.
Cover, and bring to a boil.
Reduce heat to 275 degrees F., simmering 2 1/2 hours,
adding water if necessary.
Quarter cabbage, add to skillett. Simmer until cabbage
is tender, about 30 minutes.
Serves 4.
