Creamy Skillet Potatoes

4 to 5 medium potatoes, peeled and cubed
1/3 cup Onion, chopped
1 envelope ranch-style dressing mix (1 ounce)
1/3 cup sour cream
2 cups milk
1 teaspoon parsley

Precook potatoes in microwave or boil until slightly tender.
Spray a large skillet with cooking spray.
Using 350 degrees F., brown onions and potatoes.
Add remaining ingredients.
Reduce temperature to 300 degrees F.
Simmer just until sauce thickens.
Makes 4 servings.
