Meatballs w/Orzo
1 onion, chopped
1 Tbsp. olive oil
14 oz. can ready to serve beef broth
1 cup uncooked orzo pasta
1 lb. frozen cooked meatballs
14 oz. can Italian flavored diced tomatoes, undrained
4 plum tomatoes, chopped
1 cup freshly grated Parmesan cheese
In large skillet, cook onion in Olive oil until tender.
Add beef broth and bring to a boil at 350 degrees F.
Stir in orzo, meatballs and tomatoes, stir. Return to boil.
Cover and reduce heat to 225/250 degrees F..
Simmer 7-8 minutes until liquid is reduced, stirring occasionally.
Add plum tomatoes and cook 5-8 minutes until orzo is tender,
stirring frequently.
Sprinkle with cheese and serve.
Serves 4-6.
