1/2 cup butter
6/7 medium potatoes, peeled + sliced
1 small onion, chopped
5 small yellow squash, cut up
2, 15 ounce cans green beans, drained
1, 16 ounce can tomato wedges
1, 4 ounce package shredded Cheddar cheese
Melt the butter in electric skillet.
Add potatoes, onion, and squash.
Cook, turning mixture until slightly brown and tender.
To top of the vegetables, add green beans and tomato wedges.
Do not stir, cover and cook about 30 minutes.
At the end of 30 minutes, turn electric skillet off.
Sprinkle cheese over top of vegetables.
Cover and let cheese melt through, about 5 minutes.
Serve with cornbread.
