Walleye Fillets in Bacon Sauce
4 pounds Walleye fillets
1/2 pound bacon, sliced and diced
3 Tablespoons all purpose flour
2 medium onions, chopped
1 1/2 cups boiling water ( I use milk)
3 Tablespoons white vinegar
1 Tablespoon lemon juice
Fry bacon until crisp. Remove and drain.
Saute the onions in the bacon fat until golden brown.
Remove all but 2 tablespoons of bacon fat.
Stir in flour; cook and blend.
Return bacon to pan.
Add the water/milk and stir.
Let simmer for a few minutes.
Then add the vinegar and lemon juice.
Place fillets in a well greased baking dish.
Pour sauce over fish.
Season with salt and pepper.
Bake uncovered for 1 hour at 350 degrees F.
