    Baked Fish w/Sour Cream, Mushrooms + Parmesan

    1 lb. fish fillets, (cod, haddock, etc.)
    ...if large, cut into serving size pieces
    1 diced green pepper or 1/4 lb. sliced mushrooms
    1 small chopped onion
    1 tbsp. I Can't Believe It's Not Butter Light
    1/2 tsp. salt
    1/8 tsp. ground black pepper
    1/2 c. sour cream
    3 tbsp. freshly grated Parmesan cheese
    2 tbsp. dry bread crumbs
    paprika
    dried parsley

    Pat the fish dry with paper towels and place in ungreased 12x7x2" baking dish.
    Saute the green pepper and onion in the butter light until peppers are almost done.
    Spoon the mixture over the fish.
    Sprinkle with the salt and pepper.
    Mix the sour cream and cheese together and spread over the pepper/onion mixture.
    Sprinkle with bread crumbs.
    Bake, uncovered, at 350 for 25 - 30 minutes, until the fish flakes easily with fork.
    Sprinkle with a little paprika and parsley.
    Makes 4 - 6 servings.
