Crab Stuffed Baked Potatoes
4 large baking potatoes
4 Tablespoons butter
1/2 c. sour cream
4 tsp. grated onion
1 tsp. salt
1/2 pound crabmeat or imitation crab
paprika to taste
Bake the potatoes.
Scoop out insides and set aside, leaving a thick,
but not too thick shell.
Use electric hand mixer on low speed to mix the
butter, sour cream, onion and salt for 1 minute.
Fold crabmeat in gently with a fork.
Fill potato shells with mixture and sprinkle with paprika.
Reheat at 450 for about 15 minutes.
Makes 4.
