Crab auGratin
2 tbsp. butter
2 finely chopped scallions, (green and white parts)
2 tsp. flour
1 c. heavy cream
1/4 c. dry sherry
1 lb. crab meat, picked over
2 tbsp. freshly grated Parmesan cheese
salt and ground black pepper to taste
grating of fresh nutmeg
1/4 c. bread crumbs
1/2 c. grated Gruyere or Swiss cheese
Preheat the oven to 400. Lightly grease a baking dish or 4 - 6 ramekins.
Heat half the butter in a saucepan over a medium heat and saute the scallions for 5 minutes.
Stir in the flour and cook for 2 more minutes.
Stir in the cream. Bring to a boil, stirring frequently.
Reduce the heat, and simmer on low, for 3 minutes.
Stir in the sherry and remove from the heat.
Stir in the crab meat, Parmesan, salt, pepper, and nutmeg.
Pour the mixture into the baking dish/ramekins.
Heat the remaining butter in a skillet over a medium heat and stir in the bread crumbs.
Sprinkle the grated cheese over the crab mixture and top with the crumbs.
Bake about 15 minutes or until the cheese has melted and the filling is bubbling.
Makes 4 - 6 servings.
