Crabby Eggs

List of Ingredients
8 large hard boiled eggs
3 tbsp. Miracle whip or mayonnaise
1 tsp dry tarragon or 1 1/2 tbsp. chopped fresh
1 tbsp. minced shallot
2 tsp. fresh lemon juice
1/8 tsp. cayenne pepper
1/4 tsp. hot sauce
1 8oz. can crabmeat, drained and picked over
salt and pepper to taste
paprika and/or fresh tarragon sprigs for garnish, if desired
Recipe
Cut eggs in half lengthwise.
Scoop out yolks.
Set whites on a serving tray.
Place the yolks from 4 eggs in a medium bowl, and refrigerate the rest for another use.
Mash the yolks well with a fork until small and crumbly.
Mix in the Miracle Whip, tarragon and minced shallot.
Stir in the lemon juice, cayenne and hot sauce.
Blend the crab meat in and mix well.
Season to taste with salt and pepper.
Fill the egg whites with about 1 heaping tablespoon full.
Refrigerate until ready to use.
Garnish with tarragon and/or a sprinkle of paprika, if desired.
