for the sauce:
2 tbsp. olive oil
1/2 c. orange juice
4 - 5 slices fresh ginger about 1/8" thick
2 tbsp. teriyaki sauce
1 tbsp. chopped green onion tops
4 salmon fillets
2 tbsp. olive oil
2 tbsp. butter
salt
pepper
Recipe
for the sauce:
Whisk the olive oil, orange juice and teriyaki sauce together in a saucepan.
Stir in the ginger and green onions.
Bring to a boil and allow to reduce for 5 minutes.
In a skillet heat the olive oil and the butter.
When hot, add salmon and brown on each side for about 3 - 4 minutes per side or until salmon starts to flake.
Add sauce, turning salmon to coat and cook for another 2 minutes.
Makes 4 servings.
