Pasta Shells + Salmon Salad

Here's a great different main dish salad. Just add bread for an
easy summertime meal. Even a picky eater may enjoy this one!
List of Ingredients
1 cup (240 ml) shell macaroni
3/4 cup (180 ml) mayonnaise or salad dressing
1 teaspoon (5 ml) grated lemon peel
1/4 cup (60 ml) lemon juice
1 T (15 ml) prepared horseradish
1 T (15 ml) prepared mustard
1/4 teaspoon (1.25 ml) garlic powder
1 medium apple, unpeeled, diced (about 1 cup/240 ml)
1 cup (240 ml) thinly sliced celery
1/2 cup (120 ml) shredded Cheddar cheese (2 oz/56 g)
1/4 cup (60 ml) thinly sliced green onions
15-1/2 oz (434 g) can salmon, drained, flaked, skin and bones
removed
Lettuce leaves
Pineapple rings, avocado wedges or seedless grapes
Recipe
Cook macaroni to desired doneness as directed on package.
Drain; rinse with cold water; drain well.
In large bowl, combine mayonnaise, lemon peel, lemon juice,
horseradish, mustard and garlic powder. Add macaroni, apple,
celery, cheese, green onions and salmon; toss lightly. Refrigerate
to blend flavors. To serve, spoon salmon mixture onto individual
lettuce-lined serving plates. Garnish with fruit, if desired.
Makes 4 - 6 servings.
