Pizza Fish Fillets w/Fettuccine
1 1/2 pounds fresh or frozen but thawed,
...haddock, cod, or orange roughy fillets,
...1/2 to 3/4 inch thick
cooking spray
1/2 teaspoon lemon-pepper seasoning
12 ounces spinach fettuccine
2 cups sliced fresh mushrooms
1 medium green sweet pepper, chopped
1 medium onion, chopped
1/4 cup water
1, 8 ounce container pizza sauce
1/2 cup shredded Mozzarella cheese, (2 ounces)
Cut the fish into 6 serving-size pieces.
Coat a 2 quart rectangular baking dish with
cooking spray.
Place fish in the baking dish, tucking under
any thin edges so the fish cooks evenly.
Measure the thickness of the fish.
Sprinkle the fish with the lemon-pepper
seasoning.
Bake, uncovered, in a 450 degree F oven until
fish just flakes easily with a fork, (allow 6
to 9 minutes per 1/2 inch thickness).
Drain off any liquid.
Meanwhile, cook fettuccine according to the
package directions.
In a medium saucepan cook mushrooms, sweet
pepper, and onion in the water, covered, for
about 5 minutes or until tender. Drain.
Add pizza sauce and heat through.
Place a piece of fish on top of the fettuccine
and spoon the sauce over the fish. Sprinkle
with the cheese.
