Salmon Fillets with Apples + Greens

List of Ingredients
1/4 c. Dijon mustard
1 c. homemade applesauce
1/3 c. cider vinegar
1/8 c. molasses
1/4 c. olive oil
1/8 c. apple cider
salt
white pepper
6 salmon fillets
mixed greens (fresh lettuce, spinach, etc.)
thinly sliced apple
fresh chives
Recipe
Puree the mustard and apple sauce in a blender/food processor until smooth.
Slowly add the vinegar, molasses, olive oil, and apple cider while keeping the blender/processor running.
Season the salmon with salt and white pepper and chill for at least 2 hours.
Lightly season the salmon on both sides with additional salt and freshly ground pepper.
Grill or broil the fillets until just cooked.
On individual plates lay a bed of greens and apples.
Place the salmon on the greens and drizzle with the cold viniagrette.
Sprinkle fresh chives over the top and serve.
