    Salmon Loaf with Cucumber Sauce

    List of Ingredients

    for the loaf:

    1 lb. can salmon, flaked and drained
    1 beaten egg
    1 10 3/4oz. can undiluted cream of celery soup
    1/2 c. chopped onion
    1/2 c. salad dressing
    1 tbsp. lemon juice
    1 1/4 c. packaged seasoned stuffing
    1/2 tsp. salt

    for the sauce:

    1/2 c. sour cream*
    1/4 c. miracle whip
    1/4 c. finely chopped cucumber
    1/4 c. minced onion or scallions


    Recipe

    for the loaf:

    Mix all the ingredients together well. Pour into a lightly greased loaf pan and bake at 350 for 50 - 60 minutes.

    for the sauce:

    Mix all the sauce ingredients together and chill while the loaf is baking.
    Serve a slice of the loaf with sauce on the top.
    Makes 5 or 6 servings.

    *The sauce is also good with lowfat yogurt cheese. Place yogurt in cheesecloth or coffee filter over a bowl and drain in refrigerator overnight.
