Salmon, smoked + Sweet Potato Frlittatas
1/2 pound smoked salmon, cut into small pieces
1 1/3 cups sweet potatoes, peeled & roughly chopped
2 Tablespoons melted butter
1/2 cup fresh breadcrumbs
3 green onions, finely chopped
2 Tablespoons garlic, finely chopped
2 Tablespoons fresh parsley, finely chopped
5 large eggs, lightly beaten
1 Tablespoon sour cream
salt and ground black pepper to taste
Heat the oven to 400 degrees F.
Boil sweet potatoes until just tender. Drain immediately & cool.
Butter a 6 x jumbo cup muffin pan & add in the breadcrumbs to
coat the bottom. Bake for 4 minutes until toasted.
Mix together remaining ingredients in a bowl & season to taste
with salt & black pepper.
Distribute potato evenly between the muffin pans.
Pour in egg mixture evenly over potato.
Bake for 20-30 minutes until firm.
Cool a little in pan before turning out.
Makes 6 servings.
Serve hot or cold with salad.
Notes:
you could change the salmon for other smoked fish...
and the sweet potatoes for either pumpkin or potato
or a mix of both.
