Salmon with Cucumber Sauce

Salmon with Cucumber Sauce
2 cups apple wood chips
1 tablespoon dried dill, or 4 sprigs fresh
1 tablespoon dried tarragon, or 4 sprigs fresh
1 teaspoon dried thyme, or 1 small bunch fresh
1, 2 pound salmon fillet
cucumber sauce, see below
for the cucumber sauce, choose one:
1 large chopped cucumber, seeds removed, if you wish,
...(approximately 1 cup)
1 cup sour cream
or use:
1 cup plain yogurt
2 teaspoons dried parsley, or 2 tbsp. freshly chopped
or use:
1 teaspoon dried parsley flakes
1 teaspoon dried chives or 2 tbsp. freshly chopped
or use:
1 teaspoon dried chives
1/4 teaspoon salt
1 finely chopped garlic clove
Place wood chips in container and fill with just enough
water to cover. Let soak for 30 minutes, then drain.
Prepare your grill or smoker using wood chips.
(For charcoal smoker, use 5 pounds charcoal briquettes.)
Mix the dried herbs together and sprinkle across the
top of the fish. Press in.
Or
Place the fresh herbs lengthwise on top of fillet and tie
down with string.
Brush seafood rack with vegetable oil.
Place fish on rack. Cover grill/smoker and cook for
about 1 1/2 hours or until fish flakes easily with fork (160F).Serve fish with sauce.
Makes 8 servings.
Cucumber Sauce:
Mix all the ingredients together. Cover and refrigerate
for at least 1 hour. Makes about 2 cups. Recipe
