    Salmon with Tarragon Butter

    3 Tablespoons butter
    1 1/2 Tablespoons fresh lemon juice
    ground pepper
    salt
    1 teaspoon dried crumbled tarragon
    2, 1 inch thick Salmon fillets (about 3/4 pound)

    Preheat broiler. Melt butter and lemon juice over low heat. Remove
    from heat and add a generous amount of pepper.

    Arrange salmon skin side down in a broiler-proof pan. Brush with half
    of butter/lemon juice mixture and lightly season with salt. Broil until
    just cooked through and transfer to plate. Add tarragon to remaining
    butter mixture and spoon over the salmon. Serves 2.


    I used light butter instead of real butter to cut calories/fat and it
    still tasted great. Also, I used course salt instead of regular table
    salt. I don't know if that makes a difference. Served with seasoned
    brown rice and asparagus - yum!
