Shrimp Fritters

List of Ingredients
3 tbsp. butter
1 lb. medium shrimp, cleaned, (peeled and deveined)
4 finely chopped green onions, including the tops
1 finely chopped green or red bell pepper
1 small finely chopped hot or mild chile pepper, optional
2 c. mashed potatoes
2 beaten eggs
salt and pepper to taste
1 c. fine dry bread crumbs
vegetable oil, for deep frying
Recipe
Melt the butter in a frying pan over a medium heat.
Add the shrimp and cook until pink, 2 to 3 minutes depending on size.
Remove the shrimp from the frying pan and let cool slightly. Then chop and set aside.
Add the onions, green and chili peppers to the butter still in the frying pan.
Saute over a medium heat until the vegetables are just softened, about 3 minutes.
Add the mixture to the mashed potatoes and mix well.
Stir in the shrimp and eggs.
Season to taste with salt and pepper.
Stir in some bread crumbs, if needed, to make the dough stiff enough to roll into balls.
Roll the mixture into 2" balls and roll in the bread crumbs in a shallow bowl.
Cover and chill for at least 30 minutes, or up to 4 hours.
Heat the oil to 360 in a deep fryer or heavy pot.
Fry 3 or 4 balls at a time for about 4 minutes, or until browned and crispy on the outside.
Remove the balls to paper towels to drain.
Serve immediately.
Makes about 2 dozen small fritters.
