Shrimp Newburg

Serve in pastry shells or over rice
List of Ingredients
1/4 c. butter
2 1/2 tbsp. flour
3/4 tsp. salt
1 pinch cayenne pepper
1 dash nutmeg
2 c. half + half
3 tbsp. dry sherry
2 lightly beaten egg yolks
2 c. peeled and cooked shrimp (about 1 1/2 - 2 lbs. when in the shells)
Recipe
Melt the butter in a medium saucepan.
Blend in the flour, salt, cayenne pepper, and nutmeg.
Cook, while stirring, for about 1 minute.
Gradually add the half + half and sherry.
Cook until thickened and smooth, stirring constantly.
Whisk about 1/3 of the hot sauce into the egg yolks, then pour the yolk/sauce mixture into the remaining sauce in the saucepan.
Add the shrimp and heat through, stirring constantly.
Makes 4 servings.
