    Shrimp Pasta w/Mixed Vegetables

    1 Tbs. butter
    1/4 cup olive oil
    2 green onion tops, chopped
    1 Tsp. chopped garlic
    1 Tbs. celery, chopped coarsely
    1 Tbs. carrots, chopped into thin sticks
    1/4 cup dry white wine
    1/2 cup mixed broccoli and cauliflower florets
    1/2 large ripe tomato, cut up
    1/2 tsp. parsley, chopped
    1/2 cup small shrimp, peeled and deveined
    1/2 tsp. Creole seasoning
    1/4 tsp. dried oregano
    1/2 tsp. dried basil
    2 portions cooked spaghetti or other pasta

    1. Heat the butter and the olive oil together in a large skillet until
    very hot, then add the green onions, garlic, celery, and carrots. Saute
    until tender.

    2. Add the wine, broccoli and cauliflower, tomato, and parsley, and cook
    until vegetables have just begun to turn tender. (Do not overcook!)

    3. Add shrimp, seasoning, oregano, and basil, and heat until shrimp turn
    pink.

    4. Take the skillet off the heat and put the spaghetti into the skillet.
    Toss with the other ingredients until well distributed.

    Serves 2.
