Stewed Shrimp with Dumplings

List of Ingredients
2 lbs. shrimp, peeled, deveined + cooked
2 c. potatoes, diced and cooked
1 sm. chopped onion
1/4 c. butter or I can't believe its not butter light
2 eggs, hard cooked and chopped
3 c. + 1/4 c. cold water
2 tbsp. cornstarch
salt and pepper to taste
6 2", unbaked pkgd. biscuits
Recipe
Combine shrimp, potatoes, onion, butter, eggs and 3 c. water. Bring to a boil, lower heat to med. and heat for 5 minutes.
Combine cornstarch and 1/4 c. cold water, stirring until smooth.
Stir into shrimp mixture.
Cook, stirring constantly, until thickened and bubbly. Season to taste with salt and pepper.
Pour mixture into a 2 qrt. casserole.
Top with biscuits, and bake at 450 for 15 to 20 minutes or until biscuits are lightly browned.
Makes 6 servings.
