    Sweet + Sour Grilled Salmon

    List of Ingredients

    1 c. freshly sliced mushrooms
    1 c. sliced onion
    1 c. sliced red or green bell peppers
    2 minced garlic cloves
    1/2 tsp. lemon pepper seasoning
    1/4 c. water
    2 lbs. Alaskan salmon (1 1/2 - 2 1/2 lbs.)
    ...(or halibut fillet)
    1 c. bottled sweet + sour sauce

    Recipe

    Saute the vegetables, garlic and lemon pepper in water in a frying pan, or wrap in a packet of double thickness foil and place on the grill for 20 - 30 minutes.
    If you have a grill seafood basket, use that or place on foil coated with non stick cooking spray.
    Place on the grill.
    Brush the salmon with the sauce. Cover, making a vent and cook for about 6 - 12 minutes per inch of thickness. Do not overcook.
    Remove from the grill and transfer to a serving platter.
    Top with the vegetables.
    Makes 4 servings.
