Trout w/Fruit Stuffing
4, 6 ounce pieces pan dressed rainbow trout,
...or 4, 12 ounce pieces drawn trout
...or fish of your choice
1, batch of fruit stuffing recipe below
2 tablespoons melted butter or margarine
1 tablespoon lemon juice
for the stuffing:
1 cup unseasoned croutons
1/3 cup diced dried fruit + raisin mixture
2 tablespoons melted butter or margarine
2 tablespoons dry white wine,
...or 2 tablespoons chicken broth
1/4 teaspoon salt
1/8 teaspoon ground allspice
1 green onion -- chopped
Heat oven to 425 degrees F. Grease a 15 1/2x10 1/2x1 inch
jelly roll pan. Mix stuffing ingredients until the liquid
is absorbed. Stuff trout. Close openings with toothpicks
or skewers. Place fish in pan. Mix butter and lemon juice
together and drizzle over trout. Bake uncovered, for 15 -
18 minutes or until trout flakes easily with fork.
