Warm Scallop Salad
4 jumbo scallops, cut in half, crossways
1 finely diced shallot
3 tablespoons cider vinegar
2 tablespoons apple cider
1/4 cup sweet butter
1/2 teaspoon Olive oil
salt and white pepper
1/2 cup chopped lettuce
1/2 thinly sliced head endive
Brush the scallops with the Olive oil.
Broil just long enough to get broiler markings.
Coat a saute pan with Olive oil cooking spray.
Transfer the scallops to the pan.
Place in oven and cook at 350 oven for 5 minutes.
Remove the scallops from the pan and add the shallots.
Add the cider and vinegar to the pan.
Scrape bottom of pan to get any little bits loosened. (Deglazing)
Cook until the liquid is reduced in half.
Add the butter to thicken.
Sprinkle with salt and pepper to taste.
Mix the lettuce and endive together.
Serve the scallops over the lettuce and top with sauce.
