Cucumber Pate
1 extra large cucumber, peeled + seeded
1 small green pepper, quartered
1 cup celery
1 medium onion, quartered
1 cup low fat cottage cheese
1/2 cup low fat salad dressing or mayonnaise
1 packet unflavored gelatin
1/4 cup boiling water
1/4 cup cold water
Spray a 1 1/2 quart dish or a 5 cup mold with nonstick cooking spray.
In a blender/food processor, coarsely chop the cucumber, green pepper, celery, and onion together.
Remove the vegetables and set aside.
Combine the cottage cheese and mayonnaise in the blender/food processor and blend until smooth.
In a medium bowl, dissolve the gelatin in boiling water. Slowly stir in the cold water.
Add the vegetables and cheese mixture and thoroughly mix.
Pour the mixture into the dish/mold and refrigerate overnight or until firm.
To serve, carefully invert mold onto serving plate and remove the mold.
Surround the pate with crackers or little sandwich breads.
Makes 12 servings.
