Recipe Introduction

You may choose a flavor other than strawberry for this too.

List of Ingredients

3 cups white granulated sugar
3/4 cups light corn syrup
3/4 cup water
2 egg whites
1, 3 ounce package strawberry flavored gelatin,
...(do not use sugar free)


Recipe

Lightly butter a 9" square pan.
Combine the sugar, syrup, and water in a heavy 3 quart saucepan.
Cook over a medium heat, stirring until the sugar is dissolved.
Bring to a boil and cook to hardball stage (252 degrees).
Meanwhile, beat the egg whites until stiff but not dry.
Beat into the gelatin.
When syrup the is 252 degrees, pour in a thin stream over top the egg whites, beating constantly to blend. Beat as long as possible.
Turn into the pan and chill until firm.
Cut into 36 pieces.
Makes 2 pounds.
