Hot Dog Lentil Soup

1 pound hot dogs, cut into 1 inch pieces
1 tbsp. vegetable oil
1 c. chopped onion
1 c. chopped celery
2 c. carrot, cut into 1/2 inch slices
2 crushed garlic cloves
6 c. water or chicken broth
2 13 3/4 oz. cans chicken stock
1 pound lentils
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. Italian seasoning or basil

Use the stock pot to saute the hot dogs in oil until browned.
Remove hot dogs and set aside.
Saute the onion, celery, carrot and garlic for about 5 - 10 minutes.
Add the water, stock, lentils, salt, pepper, and Italian seasoning.
Bring to a boil.
Reduce heat to low and simmer for 1 - 1 1/2 hrs.
Adjust the seasonings, add hot dogs and serve.
Makes 8 - 10 servings.
