Apple Jam

Wind blown apples, when the injured portions are removed,
make an excellent jam with this recipe.
List of Ingredients
tart baking apples, like Granny Smith
light brown sugar
thinly cut rinds and juice of same lemons
ginger
ground clovesRecipe
Pare, core and thickly slice the apples.
For every pound you will need:
1 pound light brown sugar
For every 5 pounds of apples you will need:
4 lemons, the rinds cut thinly and their juices
and
1/4 lb. young whole ginger
and
1 ounce of whole cloves.
Place everything together in a large bowl or stainless
pot until the next day.
Then boil until perfectly clear and until the apples have
an amber color.
